350g plain flour
370g castor sugar
60g cocoa powder
1 tsp bicarbonate soda
½ tsp salt
150g dark chocolate chips
Sieve all the dry ingredients in a large bowl together, mix with a whisk and set aside.
1 tbsp instant coffee (mix in hot water and set aside to cool)
425ml vegetable oil
1 cup of butter milk
3 large eggs
In a large bowl pour in the instant coffee mixed, the vegetable oil, butter milk and the eggs (all wet ingredients).
Start to mix with your whisk and make sure it all blends in together properly. Very easy yayyy!!
To round up, add the dry ingredients in step 1 into the wet ingredients and get staring it until it is all mixed together, nice, dark and fluffy.
Now, you can use a jug or an ice cream scoop (spoon) to pour into your cupcake tins already lined with cupcake cases. Easy does it people, try not to fill the cupcake cases to avoid rising much higher than the case.
Preheat oven to 160 degrees and then bake for 25minutes and get them out of the oven to cool for about 20 minutes and your chocolate yummy cupcakes are ready to eat.
